As G said, a hectic week..so when the kids said they were out for the night we decided to stay in….A quick trip to Bentley’s butchers in Pudsey where we purchased two French trimmed racks of Lamb(£11) for dinner and a couple of their award winning fabulous warm pork pies for a quick lunch snack …yummy!
On the way home we stopped at the farm shop on Roker Lane and bought fresh fruit and veg, freshly dug out carrots to go with the lamb and beautiful figs to have with creme fraiche . To our delight the Fresh Fish van was there (every other week)!
We couldn’t resist some king prawns for a starter. The selection was excellent with cod, haddock, pollock, sea bass, dressed crab and much more.
We gently fried the prawns in butter/olive oil, chives, chilli and garlic and sat them on a good bunch of fresh water cress. The racks of lamb were coated in a mint jelly, thyme and rosemary mix, then roasted. A couple of Duchy of Cornwall Gin and tonic’s as aperitifs with M&S pink Prosecco to accompany dinner. We were too full for the figs but saved them for breakfast with tea and crumpets.
